До того как вплотную заняться актёрской профессией, Грег Гранберг пробовал себя в разных ипостасях. Вместе со своими друзьями он основал службу доставки замороженных йогуртов «Yogurt Runners», затем некоторое время работал ассистентом продюсера Джоела Сильвера, занимался коммерцией.

В 1991 году Грегу Гранбергу досталась небольшая роль в сериале «Шёлковые сети». В 1998 году Джеффри Абрамс предложил Грегу Гранбергу постоянную роль в сериале «Счастье». Четыре сезона он играл Сина Бламберга (Sean Blumberg). В 2001 году он получил роль агента ЦРУ Эрика Вайса (Eric Weiss) в другом проекте Джеффри Абрамса «Шпионка». Оба сериала имели большой успех.

В 2003 году Грег Гранберг получил главную роль в ситуативной комедии «The Jake Effect», которая вскоре была закрыта каналом NBC. С 2002 по 2004 год он успел засветиться в таких хитах, как «Мёртвая зона», «Доктор Хаус», «Что насчёт Брайана» и «Дефективный детектив».
